Kat's Turkey Sherry Eggs

 

Onto warm biscuits, split in half, place 2 slices of thinly sliced smoked turkey.

Top with 2 perfectly poached eggs. Drizzle with Sherry Sauce and garnish with chives.

Sherry Sauce:

1/4 cup butter
1 1/4 Tbsp flour
1/2 cup cream
1/4 tsp salt
1/2 tsp Worcestershire
1/8 cup sherry
Cayenne, pinch
Black pepper, pinch

Melt butter in sauce pan. Add flour and stir 'til smooth. Add the rest and stir over low heat until slightly thickened.
