James's Enchilada

 

1 tbs chili powder
1 cup oil
1 10 oz can enchilada sauce
1 recipe Kat's chili   Kat's ChiliCH10
2 cups grated Cheddar cheese
1 large onion minced
20 corn tortillas
To taste; picante or other sauce Sauces Mexican

Add chili powder and enchilada sauce to hot chili. Heat tortillas in hot oil until
soft. drain on paper towels. One at a time place tortillas in 9x13 in pan. Put 1 tbs
chili mix, 1 tbs cheese and some onion in the tortilla. Roll up tortilla and place seam down
and continue until pan is full. Covering the enchiladas with remaining onion, chili and cheese.
Bake @ 350 for 20 min
