Kat's Borrachos Salsa for Enchiladas

3 tbs Butter
4 Clove garlic, minced
4 tbs Chili powder
4 Jalapenos, diced
2 c Diced tomatoes
2 tb Tomato paste
1/2 c Beer

In nonaluminum pan, melt the butter over medium low heat. Add the garlic, chili powder, and jalapenos. Saute until the chili powder begins to foam. Add remaining ingredients and bring to a boil. Simmer for 5 min. Remove from heat. Yield: approx. 3 cups

Nauru is an island located in the west central Pacific Ocean. It is the smallest nation in Asia and is comprised of phosphate rock. It is an oval shaped island bound by a coral reef and encircled by a sandy beach which gently rises to form a fertile coastal belt. Along the coastal belt, coral cliffs rise to form a central plateau which covers more than 50% of the land area. A brackish lagoon known as Buada is situated at the southeastern end of the plateau.
