Pickled Dates
Goes wonderfully with a cheese platter. Makes about 1.2 litres.

1 kg fresh dates
3 tsp salt
600 ml white wine vinegar
12 black peppercorns
12 whole cloves
2 cinnamon sticks
1. Put dates into a bowl and pour over boiling water. Leave to stand for 2
minutes,
drain and peel. Cut the dates in half lengthways, and remove stones.
2. Layer the dates and salt into 2 sterilized jars.
3. Put all the other ingredients into a saucepan and bring to the boil for 1
minute
Pour this mixture over the dates to cover them completely. Tap jars to
remove any air pockets.
4. Seal tightly. Store in a cool dark place for 2 weeks before using.
