          Gooseberry Pickle



Look for the smaller green gooseberries which have a fuller flavor.


convert measurements
500 g gooseberries
500 g green peppers
250 g fresh ginger
250 g mango chutney
1 tsp salt
1 tsp turmeric
1 tsp chilli powder
1/2 tsp cumin seeds
2 tbsp mustard oil
100 ml water


1. Wash the gooseberries, chop and de-seed the peppers, peel and chop the ginger.

Simmer the gooseberries in enough water to cover, until soft.

2. Heat the mustard oil in a pan until it fumes. Lower heat to medium and add the salt,

spices, mango chutney, gooseberries and ginger. Stir-fry the mixture for 5 minutes.

3. Add the peppers and mix well. Add the water, cover and simmer for 5 minutes.

4. When cool, spoon into sterilized jars and seal firmly.
