                Pickled Citrus Figs



A lovely syrupy pickle - layer the orange and lemon slices

against the sides of the jars to create a pretty effect.


convert measurements
16 large fresh figs
200 g sugar
325 ml water
1 lemon
1 orange
6 cinnamon sticks
30 whole cloves
6 cardamoms pods


1. Thinly slice the orange and lemon and remove seeds.

2. Put the sugar and water in a large pan and bring to the boil.

Turn down the heat to very low, and add the figs, orange and lemon.

Put the spices into a piece of muslin and tie to make a bag. Add this to the pan and simmer

slowly for about 1 hour or until the juice has turned syrupy and golden.

3. Discard the spice bag and carefully spoon the figs, lemon and orange

slices into hot sterilized preserving jars, and pour over the syrup. Cover and seal firmly.
