          Peach Fritters

 

Beat 2 eggs light, then add 1 pint of buttermilk, in which a small teaspoonful of
soda has been dissolved, a pinch of salt and enough flour to make a rather thick batter.
Have ready peaches, peeled and sliced thin; stir these into the batter, then drop this by
 spoonfuls into hot lard and fry until a nice golden brown. Serve hot with maple or other syrup.

It's better to recall something you wish you'd said, than something you wish you hadn't.
