cup sugar
2-1/2 cups water
3 cups Fresh Chopped Pineapple (16 oz.)
1 tablespoon grated lemon peel
1/4 cup lemon juice
1 bay leaf
3 thyme sprigs
1 can (15 oz.) peach slices, drained
Combine sugar, water, pineapple, lemon peel, lemon juice, bay leaf and
thyme in large saucepan.
Heat to boiling over high heat, to dissolve sugar. Reduce heat to low;
cover and simmer 5 to 10 minutes or until pineapple is tender.
Transfer pineapple, with slotted spoon to bowl. Add peaches to pineapple.
Boil the poaching liquid, uncovered until reduced to 1 cup, about 15
minutes. Pour liquid over fruit.
Cover; chill 2 hours. Before serving, remove bay leaf and thyme. Serve with
grilled or boiled chicken breast.
