1cup dried tomato (1 1/2 ounces), each snipped in half
hot water
1 1/3 pounds potatoes (about 4 medium), cut into 1/4-inch thick slices
1 tablespoon vegetable oil
12 ounces reduced-fat smoked sausage, cut into 1/4-inch thick slices
3/4 cup sliced green onion
1/3 cup prepared honey-dijon barbecue sauce
In medium bowl, combine tomatoes and enough hot water to cover; let stand 10
minutes.
2. Meanwhile, place potatoes in microwave-safe dish; cover with plastic wrap,
venting one corner. Microwave on high 7 to 9 minutes or until just tender.
3. In large nonstick skillet, heat oil over medium-high heat until hot. Add
sausage; cook and stir 5 minutes. Add potatoes; continue cooking 5 minutes.
4. Drain tomatoes; add to skillet with onions and barbecue sauce. Cook 2 to 3
minutes or until heated through, stirring frequently
