Sea Bass Caroline
4 fillets of Sea Bass
2 slices of bacon or turkey
1 c. sliced fresh mushrooms
1/2 c. onion
3 tbsp. butter or margarine
1/4 tsp. dried tarragon
crushed paprika
In a pan, cook bacon, save drippings. Crumble bacon; set aside. Cook mushrooms
and onion in dripping til tender. Place fish in a baking dish. Combine
mushrooms, onion, butter and tarragon. Spread on top of fish; sprinkle with
paprika. Bake at 350 for approximately 20 minutes until fish flakes easily.
Garnish with bacon. Serves 4.
