Tex Mex Fish

 

Kat's Tex Mex Salmon Cheese Patties

 

1 (14.75-ounce) can salmon, drained, flaked, with bones removed
1 1/2 cup pico de gallo 
Tex Mex Sauces
2 eggs, beaten
1 package  Mexican corn bread mix
8 thin deli slices of  classic havarti cheese


Heat oven to 400 degrees F. Line a baking sheet with foil and spray with non-stick cooking spray; set aside.

Combine salmon, pico de gallo, eggs and Mexican cornbread mix in a large mixing bowl. Add 1/2 cup WATER and stir to combine. Season to taste with black pepper and shape into 6 patties.

Bake in oven on middle rack for 15 to 18 minutes. Place a slice of  Havarti cheese on each salmon patty and allow cheese to melt and serve hot.
