Lynn's Swordfish With Mango Relish
1 mango -- peeled and diced
1 medium tomatillo -- husked, washed
1/2 red bell pepper -- seeded
1 and minced
2 tbsp fresh cilantro -- minced
2 tbsp lime juice
2/3 lb swordfish
1 ground black pepper -- to
1 taste
1 and diced
Combine the mango, tomatillo, bell pepper, cilantro and lime juice.
Set aside. Place the fish on a rack in a baking pan or use a broiler
pan and sprinkle fish with pepper. Bake in a preheated 450-dregree
oven for 12 minutes per inch of thickness. Serve with the relish on
the side
