Fish Casseroles

 

James's Cheese Halibut Casserole

 

1 lb Halibut
2 x Bay leaves
4 slc Onion
4 tsp Butter
4 tbl Flour
2 cup Milk
    Salt and pepper
1/2 lb Sharp cheddar cheese

 Method :
Steam halibut, bay leaves and onion for 30 minutes. Prepare white sauce of butter, flour, milk, salt and pepper. Grate cheese. Break fish into medium sized pieces. Layer fish with cheese and white sauce. Cover with 1/2 cup buttered bread crumbs. Bake at 350 for 35 minutes.
Serves 8.
