Fish Casseroles
Shanna's Fish Tomato Casserole
4 x fish fillets
2 x tomatoes
1 x onions, medium
50 gm butter
1 cup white wine
salt, pepper
2 tsp fresh herbs (chopped)
Method :
Butter a shallow casserole dish generously.
Seed and dice the tomatoes.
Dice onion fine.
Place in fish, sprinkle over onion and tomato, pour over wine. Season well.
Cover and cook in preheated oven 180C/350F for 10 minutes or until fish is just
cooked through.
Gently lift fillets from dish, arrange on a bed of rice and spoon over some
cooking juices.
Sprinkle with chopped herbs and serve.
