Fish Casseroles
Shanna's Misc Filets Casserole
1 kg fish fillets
70 gm butter
2 cup mushrooms
1/2 cup onions, medium
1 tsp lemon juice
1 can cream of celery soup
salt, pepper
1/10 tsp cayenne pepper
1 tbl basil, chopped
1 cup tomatoes
1/2 cup spring onions
Method :
Dice onions, tomatoes. Slice mushrooms.
Heat butter in a fry pan, add onion and cook 2 minutes without colour, add
mushrooms and continue to cook gently 3 minutes longer. Stir in lemon, celery
soup, basil and seasonings and heat through. Remove from heat.
Butter a casserole dish, lay fish over base and pour over sauce mixture. Scatter
with diced tomato.
Cover and cook in oven at 180C/350F for 25 minutes or until fish flakes easily.
Sprinkle over spring onions and serve with rice.
Suitable fish: flat head, dory, snapper, sea perch, blue eye, rockling, trevally
