Shrimp Fajitas
Soft Taco Size Flour Tortillas
2 Tbsps. Lime Juice
2 Tbsps. Soy Sauce
2 Tbsps. Fresh Ginger minced
2 Tbsps. Garlic minced
1/4 tsp. Tabasco Sauce
1/8 tsp. Black Pepper
1 lb. Medium Shrimp peeled and deveined
2 Tbsps. Vegetable Oil
1/2 Red, yellow or green Bell Pepper thinly sliced
1 small Onion thinly sliced
2 small Tomatoes seeded and chopped
To taste; picante or other sauce
Blend first seven ingredients together, except tortillas. Then add shrimp. Cover
and place in refrigerator for 1-2 hours.
To serve: Heat 2 tablespoons oil in skillet. Sauté peppers and onion until
soft. Add shrimp and tomatoes, sauté just until shrimp turns pick. Don´t
overcook or shrimp will become tough. Serve with warm tortillas.
