 Kat's Fluffy Egg Omelet

 

3 eggs
2 tablespoons warm water
1 tablespoon butter or margarine

Your favorite fillings In a small bowl, mix together eggs and water. In a medium nonstick skillet,  heat butter or margarine over medium-high heat. Pour in the egg mixture and, using a spatula,  push the cooked egg from the edge into the center, tilting the pan so the uncooked egg fills in around the edge.
While the top is still a little moist, sprinkle on the fillings.
When eggs are set, fold omelet in half and slide it onto a serving plate. Serve immediately.

FILLINGS: Bacon, ham, sausage, cheese, bell peppers, mushrooms, tomatoes, onions

Crushed butter crackers or pretzels Brie cheese, avocado, and alfalfa sprouts
Canned shrimp or canned crabmeat Spicy black beans, rice, and salsa
