Kat's German Sausage Omelet



2-3 hot or sweet German sausage links
2 tbsp. oil
2 c. peeled, thinly sliced potatoes
1 med. onion, chopped
1 lg. green bell pepper, chopped
8 lg. eggs
1/2 c. water
1/2 tsp. salt
1/2 tsp. red cayenne pepper
Cook sausage in skillet until brown. Remove from skillet, place on paper towel when cool; slice.Add oil to drippings and add potatoes and peppers. Cook about 12 minutes or until vegetables are tender. Meanwhile, in large bowl whip eggs, water, salt and pepper. Return sausage to skillet, pour in egg mixture. Reduce heat to medium, cook about 10 minutes until eggs are set on bottom and sides. Next place skillet under broiler about 3 minutes until top of omelet is puffy and set. (If skillet does not have heat proof handles, wrap handles tightly in 2 layers of foil.)
