Bacon Cheddar & Pea Filling:
4 slices bacon
cut into 1/4-inch pieces
1 cup frozen peas
thawed
2 ounces sharp Cheddar cheese

drippings from skillet, leaving bacon. Stir in peas and cook 1 minute.
Reduce heat to medium-low. Pour Frittata Mixture over filling in skillet;
sprinkle top evenly with cheese. Cook 3 minutes, without stirring, or until egg

To serve, gently slide frittata out of skillet and onto cutting board or
platter. Cut into wedges.
