Irish Potato Omelet
6 Med to Large Eggs
1 Tablespoon Chopped Chives
1 Large or 2 Med Potatoes
1 Tablespoon Scallions
Lemon juice
Salt
1 Tablespoon Butter
Pepper
Boil potato (s) and mash.
Separate eggs yolks and egg whites.
Set egg whites aside.
Beat together the mashed potato and egg yolks.
Add a splash of lemon, chives, scallions and salt & pepper to taste. Mix all
together.
Whisk egg whites until stiff and gently fold them into to mixture. Leaving as
much air as possible.
Melt butter in omelet pan or frying pan. Cook the mixutre until golden then run
it under the broiler to finish and puff it up. Serve at once
