Shanna's Cherry Stuffed French Toast
1 French baguette
4 ounces cream cheese
8 ounces cherry pie fill (about 1/2 can)
4 large eggs
1/2 cup cream
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla extract
Preheat griddle to 350 degrees.
In a medium bowl mix 4 oz. of cream cheese with cherries (take cherries from can
with a fork in order to avoid too much syrup). Blend until smooth. Mixture
should be pink, cherries will be in pieces.
In a large bowl beat eggs. Add in cream, vanilla extract, cinnamon &
nutmeg. Mix well.
With a serrated knife cut baguette diagonally into 1/2 inch slices. Cut each
slice into a top and bottom without separating. Fill with a tablespoon of the
cream cheese mixture and close. Soak stuffed bread pieces in egg mixture until
slightly "squishy". Place on hot greased griddle and cook until golden
brown. Serve with powdered sugar, maple syrup or fresh fruit.
I have no respect for the passion of equality, which seems to me
merely idealizing envy.
