Granny's Creamy Peach French Toast

4 oz. pkg. cream cheese, softened
8 3/4 oz can peaches
4 T chopped pecans
2 T honey
10 slices French bread, cut diagonally

In small bowl, beat cream cheese until light and fluffy. Add peaches, pecans and honey; blend well. Cut pocket in top rounded edge of each bread slice. Carefully fill each with 1 1/2 tablespoons of cheese mixture.

Heat large skillet. In shallow bowl, slightly beat eggs. Add half and half and vanilla; mix well. Dip bread slices in egg mixture, coating both sides. Cook in skillet over medium heat 3 to 4 minutes

If I had a formula for bypassing trouble, I wouldn't pass it around. Wouldn't be doing anybody a favor. Trouble creates a capacity to handle it. I don't say embrace trouble. That's as bad as treating it as an enemy. But I do say, meet it as a friend, for you'll see a lot of it and had better be on speaking terms with it.
