Shanna's Cut Up Fried Chicken Cream Gravy

 

Chicken cut into  pieces or boneless
Buttermilk 
Salt & pepper
Fine dry breadcrumb
Lard for frying

Cover chicken with buttermilk and let set 10-15 mins, drain, sprinkle with seasonings.
Dredge in bread crumbs, patting the crumbs on with your fingers. Chill on a platter 10-15
mins so coating can set. Heat about 1/2 inch lard, when very hot, but not smoking, add chicken
brown quickly on each side. Reduce heat to low. Cover and cook slowly for 20 mins, 
turning the chicken, once.
