Granny's Apricot Fritters

 

1 Can unpeeled apricot halves -- (29 oz.) thoroughly drained
1 egg 2/3 C. milk
1 Tbs Crisco -- melted
1 C. all-purpose flour
2 Tbs sugar
1/4 Tesp salt
1 Tesp. baking powder confectioners sugar
Crisco (for deep frying)

Dry apricot halves on paper towels until dry. Beat egg with milk; stir in melted Crisco. Combine flour, sugar, baking powder and salt. Add to egg mixture and stir until mixed. Dip apricots in batter; fry a few at a time, in deep Crisco heated to 365 degrees until fritters are brown, about 4 minutes, turning once. Do not use the frying basket. Drain on paper towels. Roll in confectioners sugar. Serve warm.
