Granny's Rice Fritters

 

2 beaten eggs 
2 C. cooked rice (room temperature) 
6 Tbsp. flour 
3 Tbsp. sugar 
2 Tsp. baking powder 
1/2 Tsp. vanilla 
1/4 C. finely chopped nuts (any type) 
3 C. cooking oil Heat oil in heavy skillet. 

Mix together all dry ingredients. Blend in eggs, rice and vanilla. Drop tablespoons of mixture in oil and fry until brown. You may dust hot fritters with powdered sugar. Kids love them.

The world stands aside to let anyone pass who knows where he is going.
