Granny's Cauliflower Fritters

 

1 Box frozen cauliflower -- (10 oz.) 
1/2 C. milk 
1/2 C. flour 
1 Tbsp. oil 
salt and pepper to taste 
1 egg -- beaten 
1 Tesp. baking powder 
1/3 C. raisins (optional) 
3 Tbsp. oil (for frying fritters -- add as needed) 

Cook cauliflower according to package directions. Combine milk, flour, egg and oil together, add salt, pepper and baking powder. Set aside. Drain cauliflower and mash with a fork. Stir cauliflower and raisins into batter. In frying pan heat 3 tablespoons oil over medium heat, when oil is hot spoon batter into oil (potato pancake size). Fry until golden brown 3 to 4 minutes on each side. Serve with a pat of butter. Blot on paper towel before serving. Makes about 8 fritters.
