Granny's Zucchini Fritters

 

1 Lb. zucchini
1 Tesp. green onion -- chopped fine
1 C. buttermilk pancake mix
Salt & pepper
1 egg -- beaten
1/2 C. oil Wash zucchini and grate in blender or by hand.

Place in large bowl and add remaining ingredients except oil. Heat oil in a large skillet over a medium high heat. Drop mixture by heaping tablespoonfuls onto skillet. As soon as fritters brown on one side, about 3 minutes, turn with pancake turner and brown the other side. This recipe will serve 6 to 8. Yields 14 fritters. May be served with sour cream.

We don't need to increase our goods nearly as much as scaling down our wants. Not wanting some thing is as good as possessing it.
