Lynn's Okra Rice Fritters

 

1 1/2 C. chopped okra 
1 1/2 C. cooked rice 
1 C. chopped tomato (fresh) 
3/4 C. chopped onion 
1 1/2 Tesp. salt 
3/4 Tesp. pepper 
1 Tesp. baking powder 
1 Tbs sugar 
1 C. flour 
1 C. meal 
2 eggs -- beaten 
oil for frying 

Combine okra, rice, tomato, onion, salt, pepper, baking powder and sugar. Mix cornmeal with flour. Pour beaten eggs over okra mixture and combine. Add meal and flour mixture and stir together. Drop batter by tablespoon into hot oil. Cook fritters until they are well browned, turning as needed. Delicious! Makes 30 fritters.
