             Mary's Baked Duck

In duck cavity, salt and quartered onion and cored apple.
Place in open roasting pan breast up
place 2 slices of bacon on breast bake at 500 for 30 min. reduce heat to350
and cook another 30 min. Discard onion and apple, let stand 10 min.
