Sautéed Chicken Liver With Onion Rings & Apples
24 chicken livers
1 tsp. salt
1/2 tsp. sweet paprika
4 tbsp. flour
6 tbsp. butter
1 Spanish onion (med.), sliced in rings
8 apple slices, 1/2" thick
4 tbsp. sugar
Season lightly with salt and paprika. Sprinkle lightly with flour. Cook gently
in 4 tablespoons butter until browned. In another pan cook onion in a little
butter, sprinkle over cooked livers. In third pan brown apple slice in remaining
butter. Sprinkle with sugar to give glaze and flavor. Put on top of livers and
onions. Very good and different from the ordinary fare. Yield: 4 servings.
Because your own strength is unequal to the task, do not assume
that it is beyond the powers of man; but if anything is within the powers and
province of man, believe that it is within your own compass also.
