Kat's Baked Kids Head

 

3 spring kid heads
2 oz. pancetta
3 cloves garlic
6 sprigs rosemary
6 tbs. white breadcrumbs
salt
pepper
1 cup white wine
1/2 cup olive oil

Clean and split the spring kids' heads. Remove any visible cartilage.
 Prepare a battuto with pancetta, garlic, rosemary, breadcrumbs, salt and pepper.
Spread this mixture over the heads, pressing lightly so the mixture adheres tightly and
covering the brain portion with aluminum foil so it does not burn while cooking.
Grease a baking pan and bake in the oven at 475ºF for 2 hours, basting occasionally with white wine.
