Kat's Chops in Pastry
Goat chops - from one goat
5 lb mushrooms
2 Spanish onions
salt
ground black pepper
marjoram
1/4 lb butter
1/2 bottle of dry, white wine
fillo dough
16 oz chevre (soft goat cheese)
Make Duxelle: chop 5# mushrooms and 2 onions, mix with salt, pepper,
marjoram, stick of butter and 1/2 bottle of wine (dry, white); cook 20-30
minutes on high heat or until dry. Quick chill in freezer.
Rub chops with salt and pepper - sear on both sides.Take 2 sheets of fillo
dough - brush with melted butter - 2 more sheets, brush again. Cut fillo dough
(all 4 sheets stacked up) into 3" squares, wrap chops in fillo dough
squares with Duxelle and chevre cheese. Back at 400° for 20
minutes. This dish can be served with the red wine sauce listed farther
down.
