Granny's Curried
Goat
1 ˝ lbs. Goat (or chicken parts), trimmed of fat
bunch of green onions, chopped (use the green part only)
salt & pepper
garlic cloves, chopped (or powder)
thyme
2 heaping tbsp. of curry powder
white potatoes, diced
green pepper, diced
vegetable oil
Rinse the meat and pat dry. Season with salt & pepper. Chop the onions and
garlic. Rub over the meat, along with thyme, curry powder and green pepper.
Cover and let season overnight. When ready to cook, rub the seasonings off of
the meat then brown in oil over medium heat. Add diced potatoes and the
seasonings you removed from the meat. Add 1/4 cup water. Bring to a boil. Cover
and reduce heat to low. Simmer until tender. Serve with pigeon peas and rice.
