Milk Fed Goat
2 legs and shanks of capretto
8 onion, peeled and cut in halves
500 g button mushrooms or porcini
6 tbsp oil
8 potatoes, peeled and cut in halves
salt and pepper
2 lemons
125 g butter
4 glasses white wine
3 cloves chopped garlic
3 tbsp sugar
Mix oil, the juice of two lemons, three teaspoons of salt and
some pepper in a bowl to make a marinade
Wash and pat dry meat. Brush each piece generously with marinade, then put
them in a roasting-pan. Pour on two glasses of white wine. Place the pan in a
medium hot oven and bake uncovered for 15 minutes. (Meanwhile, dip your
onion-halves in marinade, and wash and dry mushrooms).
Take out the pan and turn the meat over, then continue baking for another 15
minutes. Then add 125 g butter and the rest of the wine. Turn the meat over once
more and bake uncovered for another 10 minutes.
Take the pan out again and add potatoes and onions. Baste them well with the
pan juices, then cover with foil, sealing it carefully, and return to the oven.
Turn down to a low heat, and bake for half an hour.
Add three tablespoons of sugar to the leftover marinade and baste the
potatoes once more also with the pan juices. Return the pan to the oven for a
further half an hour, till the potatoes are cooked.
Take the meat out, put mushrooms in the pan, and cook in the oven for 10
minutes. Arrange the meat on a platter, with potatoes and mushrooms around it.
Take out the pan and turn the meat over, then continue baking for another 15
minutes. Then add 125 g butter and the rest of the wine. Turn the meat over once
more and bake uncovered for another 10 minutes.
Take the pan out again and add potatoes and onions. Baste them well with the
pan juices, then cover with foil, sealing it carefully, and return to the oven.
