Lynn's Greek Barley Salad

 

2 cup Chicken Broth
1 cup Barley
1/2 med Red Bell Pepper -- cut in thin strips
2 x Scallions -- thinly sliced
2 x Plum Tomatoes -- cut in eighths
1/2 cup Black Olives -- sliced
4 cup Romaine Lettuce -- torn
    Dressing
3 tbl Olive Oil
3 tbl Lemon Juice
1 clv garlic -- pressed
1/2 tsp Oregano
1/4 tsp Salt
    fresh ground black pepper - to taste
1/2 cup Feta Cheese -- crumbled

 Method :
Combine chicken broth and barley. Bring to a boil, cover, and simmer for 40 minutes until tender. Refrigerate until cool.
Prepare vegetables and place into a large salad bowl. Add cooled barley.
Whisk dressing ingredients together. Drizzle dressing on top, and toss.
Top with feta cheese.
