Cullen's Greek Salad
2 whl cucumbers English peeled and sliced
2 whl tomatoes cut in 1/2
4 whl scallions thinly sliced
Greek olives kalamata pitted and sliced original called for 8
feta cheese crumbled original called for 1/3 cup
DRESSING:
2 tbl red wine vinegar
2 tbl lemon juice
3 tbl extra virgin olive oil
2 tsp oregano
salt and pepper
10 x romaine lettuce leaves torn in bite-size pieces
Lemon Wedges garnish
Method :
In a serving bowl, mix together cucumbers, tomatoes, scallions, olives, and feta
cheese. In a small bowl whisk together vinegar, lemon juice, olive oil, oregano
and salt and white pepper to taste. Pour over vegetables in salad bowl and toss
until vegetables are well coated. I like to make it to this point and let it sit
for awhile. Then add the Romaine right before serving.
