Shanna's Black Eyed Pea Greek Salad

 

3 cup cooked black eyed peas
1/2 cup diced bell pepper (red and/or yellow)
1/2 cup diced scallions
1 sm clove garlic crushed
1/2 tsp dried oregano
3 tbl olive oil
4 tbl red wine vinegar
1 tsp lemon juice
2 tbl minced fresh parsley
1/2 tsp salt

 Method :
Combine all ingredients in a large bowl. Marinate 6 to 8 hours in the refrigerator, stirring occasionally.
Prep time: 6 minutes
Serves: 8
Yield: 4 cups
