Cullen's Grain Berry Greek Salad
1 cup spelt berries
4 cup water
1/2 cup thinly sliced red onion
1/2 cup julienned seedless cucumber
1/2 cup julienned red pepper
2 tbl minced fresh dill
1 tbl minced fresh mint
1/4 cup extra virgin olive oil
3 tbl fresh lemon juice
1 x garlic clove, minced
1/2 cup crumbled feta cheese, (optional)
Salt and white pepper
Method :
6 Servings
1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then
reduce heat and simmer for 1 hour, or until just render. Drain well and chill.
2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill,
mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.
Season to taste with salt and pepper, and refrigerate until served.
