Ground Beef Casseroles

 

Kat's Ground Beef Macaroni Cheese Sauce

1 lb ground beef
1 c chopped onion
1 c tomato paste (15 oz)
pinch of oregano
1/2 tsp salt & pepper
1 garlic clove minced
2 c elbow macaroni
1 c cheddar cheese
1 egg beaten
Cheese sauce

3 tbs butter
2 tbs flour
1 1/2 c milk
1/2 tsp salt
1 c cheddar cheese

In a skillet, cook beef & onion until meat is browned & onion is tender. Drain.
Stir in tomato sauce, salt, pinch of oregano, pepper, & garlic.
Cover and simmer for 15 minutes.
Meanwhile, cook macaroni according to package.
Combine macaroni, cheese and egg.
For the cheese sauce, melt butter, stir in flour & cook until smooth and bubbly.
Stir in milk; cook & stir for 5 minutes. Remove from heat & stir in salt & cheese..
Spoon 1/2 macaroni mixture into greased 13x9 dish.
Cover with meat mixture & top with remaining macaroni. Spread sauce over top.
Bake at 350° uncovered for 30 minutes.
Let stand 5-10 minutes before serving.
