Granny's Roast Beef Hash

 

1/4 cup oil
1 med onion chopped
2 cups boiled potatoes diced
2 cups leftover roast diced
Salt & pepper
1 cup gravy
Paprika

Melt oil in skillet, sauté onion until transparent. Stir in potatoes, roast and gravy. Cook over
low heat about 20 mins. Stir mixture and add seasonings and cook a few more mins. 
Serve with salad and corn bread.

Note; you can brown potatoes instead of boiling, but only half brown, not letting cook inside and
add add cooking time until potatoes are tender
