Hash Browns
Cullen's Hash Browns & Garlic Mushrooms
4 medium-sized potatoes
5 large mushrooms
1 onion
1 egg
about 2 tablespoons olive oil
salt and pepper to taste
1 clove garlic
Peel and grate potatoes.
Dice onion finely. Crack egg and whisk a little.
Combine potato, onion and egg and squeeze into small patties.
Fry in olive oil.
Quarter mushrooms. Finely dice garlic and combine in same pan with a healthy
dose of olive oil.
Cook all until mushrooms are soft and hashbrowns are golden brown.
Add salt and pepper to taste.
