Dill Sweet Pickles
Deli style sweet dill pickle - just eat them straight out of the jar!

4.8 liters (8 pints) medium-sized cucumbers
125 g salt
boiling water
750 g granulated sugar
750 ml cider vinegar
250 ml water
1/2 tsp turmeric
1 tsp dry mustard
1 tsp allspice berries
1 tsp mustard seed
1 tsp celery seed
1. Cut cucumber into 2.5cm chunks, and combine with the salt. Place in
large pan or crock and add boiling water to cover. Let stand overnight, then
drain thoroughly.
2. Mix together the sugar, vinegar, water and spices in a large saucepan.
Turn the heat to high to bring to a boil. Add the cucumbers and return to the
boil.
3. Spoon into hot sterilized jars and seal firmly. Store in a cool dark place.
