Olives
An easy way to enhance the flavor of plain bought olives - your guests will be
impressed.

225 g jar pitted green olives, drained
150 g jar pitted kalamata olives, drained
2 bay leaves
1/4 tsp dried rosemary
1/2 tsp fennel seed
1/2 tsp dried thyme
60 ml white wine vinegar
1. Rinse olives well in cold running water. Wash the jars well and sterilize
them.
2. In a mixing bowl combine the herbs and vinegar. Add the olives and toss until
well coated. Place olive mixture into the two jars making sure each jar has one
bay leaf.
Fill any empty space in the jars up with water.
3. Seal firmly and shake well. Refrigerate for at least 2 days.
