Pickled Star Fruit
This little fruit pickle looks brilliant if you take the time to pack the jars
creatively!
3-4 starfruit
2 cm piece fresh root ginger
250 ml cider vinegar
125 g castor sugar
1 red chilli
1 cinnamon stick
1 piece star anise
1. Thinly slice the starfruit. Wash the ginger, but don't peel it. Chop the
chilli.
2. Put the vinegar and sugar in a large pan, and heat gently until the sugar
has dissolved.
3. Add the ginger, chilli, cinnamon stick and star anise, and simmer for 1
minute. Remove from the heat.
4. Arrange the starfruit slices in warm sterilized jars, pressing slices
flat against the sides.
Pour over the pickling liquid. Seal firmly and leave to cool.
Refrigerate for up to 1 month.
