             Pickled Yellow Squash

 

8 cups yellow young squash
2 cups sliced onions
1 tbs salt
3/4 cup diced bell pepper
11/4 cup vinegar
3/4 cup sugar
3/4 tsp celery seed
3/4 tbs mustard seed

Combine onion and squash in bowl. Sprinkle with salt and let stand for 1 hour.
Combine bell pepper, vinegar, sugar, celery seed and mustard seed in pan and bring to boil. Add
squash and onion and bring to a boil. Remove from heat, pack squash in jars and cover  with left over liquid.

Life is a buffet and only the suckers are starving.
