Jambalaya & Cajun Rice

 

Kat's Texas Jambalaya

 

2 cups  Instant Long Grain Rice
1 (15 ounce) can diced tomatoes with green chiles
3 stalks celery, chopped
1/2 pound Smoked Sausage, sliced
3 green onions, chopped
1 (12 ounce) package frozen raw shrimp, peeled and deveined

Combine rice, tomatoes, celery, sausage, onion and 1 cup water in a large skillet. Bring mixture to a boil over high heat.
Reduce heat to medium low, cover and cook 10 minutes. Stir in shrimp, cover and continue to cook 5 more minutes until rice is fluffy. Season to taste with salt and pepper
