Shanna's Green Tomato Blueberry Jam
5 cups fresh blueberries, washed
3 packages (1.75 ounce size) fruit pectin
4 large green tomatoes, coarsely chopped
1/4 cup lemon juice
1 cup water
2 teaspoons ground cinnamon
5 cups sugar
1/2 teaspoon ground nutmeg
Directions:
Pulse blueberries and chopped tomatoes in a blender or food processor 3 or 4
times or until mixture is ALMOST smooth. Cook blueberry-tomato mixture, water
and sugar in a dutch oven or large, heavy over medium heat, stirring constantly,
until sugar dissolves.
Stir in fruit pectin and remaining ingredients. Bring mixture to a boil; cook,
stirring constantly for 5 minutes or until mixture thickens.
Fill hot jars, use new seals and caps. Process in boiling water bath for 10
minutes.
