Kat's Cajun Fig Preserves
2 1/2 quart fresh figs
2 1/4 cup sugar
1 tsp lemon juice 1 cup water
Directions
Scald whole figs in boiling hot water and peel.
Drain well. Combine sugar and water and cook until sugar dissolves.
Add lemon and figs, then simmer until tender (approximately
1 1/2 to 2 hours). Pour into jars and seal immediately.
