Lamb With Fresh Mint Tomato
2 lbs. boneless loin of
lamb
Salt & pepper to taste
2 garlic cloves
minced
2 tomatoes diced
1 teaspoon chopped
mint
8 oz dry whit wine
1 camomile tea
bag
8 oz chicken broth
1 ox chilled butter
Salt & pepper lamb. In med. skillet heat oil and cook
lamb on both side until desired doneness
remove from pan and keep warm. Discard excess oil and in same pan add garlic,
tomato fresh mint
. Sauté over a medium high until juice from tomatoes begin to seep out.. Add
white wine and reduce to 1/4 original
add tea bag and broth. remove tea bag , remove pan from heat and slowly add
butter. Pour over lamb potions.
