Lamb With Garlic
1/2 leg of lamb with bone 3-4 lbs.
1/2 tesp salt
1/4 tesp black
pepper
1 tbsp. fresh rosemary chopped or 1 tesp dried
12 cloves garlic
unpeeled
Vegetable oil
preheat oven to 375F rub salt, pepper and rosemary over lamb. Place lamb
roast fat side up in
shallow roasting pan. Coat garlic with oil and place in pan. Cook 45- 60 min.
basting often.
serve over lemon rice.
Lemon Rice
2 cups canned chicken
broth
1 cup long rice
1 Tbsp lemon zest finely
grated
2 tablespoon butter
salt and pepper
in a small pan heat broth to boiling. Stir in rice, cover and simmer 18 min.
Blend in lemon
let stand 5 min until broth is absorbed. Add butter, salt and pepper
